An upscale Pittsburgh bar and restaurant will begin a “no tipping” policy in April.
Employees of Bar Marco will be paid a $35,000 starting salary, and given healthcare and a share in the company in lieu of tips, reported Pittsburgh outlet WXPI. The bar does not plan to increase prices.
“We saw 40 percent revenue growth last year, mainly because of [the employees], and they deserve to be recognized as the professionals they are and have opportunities to turn what they love into a respectable career with upside potential,” co-owner Bobby Fry told the Pittsburgh City Paper.
“We’ve done a year’s worth of homework for this,” he added. “Our greatest risk is that we do not take care of the people who make Bar Marco so special.”
Bar Marco is expanding its menu and adding seats in an effort to offset the new costs. It’s been around for three years, and boasts local food, craft cocktails and unique wines, and “No Menus Monday.”
Tips left on the table after the new policy is in place will go to Bar Marco’s nonprofit Food Revolution Pittsburgh Cooking Club.
